Aloo Gobi Infused with Sabz Sandar Masala

For the Sabz Sandar Masala, ensure it has a balanced blend of spices like cumin, coriander, turmeric, and perhaps a hint of garam masala or chili powder to elevate the flavors of the Aloo Gobi. Adjust the spice level according to your preference.

This recipe highlights the essence of the masala and brings out the delicious flavors of the Aloo Gobi.

Ingredients:-

  • 2 cups cauliflower florets
  • 2 cups potato cubes
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon Sabz Sandar Masala (adjust to taste)
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon cumin powder
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

  1. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
  2. Add chopped onions and sauté until they turn golden brown.
  3. Add ginger-garlic paste and cook for a minute until the raw smell disappears.
  4. Put in chopped tomatoes and cook until they soften and the oil begins to separate.
  5. Add Sabz Sandar Masala, turmeric powder, coriander powder, cumin powder, and salt. Mix well and cook for a couple of minutes.
  6. Toss in the cauliflower florets and potato cubes. Stir to coat them with the spice mixture.
  7. Cover the pan and let it cook on low-medium heat, stirring occasionally. Add a splash of water if needed to prevent sticking.
  8. Cook until the vegetables are tender yet slightly crisp. Garnish with fresh coriander leaves.
