This recipe highlights the essence of the masala and brings out the delicious flavors of the Aloo Gobi.
Ingredients:-
- 2 cups cauliflower florets
- 2 cups potato cubes
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 1 teaspoon ginger-garlic paste
- 1 teaspoon Sabz Sandar Masala (adjust to taste)
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1/2 teaspoon cumin powder
- Salt to taste
- Fresh coriander leaves for garnish
Instructions:
- Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until they turn golden brown.
- Add ginger-garlic paste and cook for a minute until the raw smell disappears.
- Put in chopped tomatoes and cook until they soften and the oil begins to separate.
- Add Sabz Sandar Masala, turmeric powder, coriander powder, cumin powder, and salt. Mix well and cook for a couple of minutes.
- Toss in the cauliflower florets and potato cubes. Stir to coat them with the spice mixture.
- Cover the pan and let it cook on low-medium heat, stirring occasionally. Add a splash of water if needed to prevent sticking.
- Cook until the vegetables are tender yet slightly crisp. Garnish with fresh coriander leaves.
